Abuelo is named after Los Abuelo farm, nestled 1,350 meters above sea level in the mountainous heart of Santa Barbara, Honduras. This is the land of Exibia Sabillon a third-generation coffee farmer who inherited not just her father's land, but his devotion to the craft. Named after her grandfather, Los Abuelo is a farm built on family, patience, and an unwavering commitment to quality.

THE PROCESS

Abuelo is crafted using the honey process one of the most labor intensive and intentional methods in specialty coffee. After harvesting, the coffee cherry's outer skin is removed while the natural fruit mucilage is left intact on the bean. The coffee then dries slowly in the sun for 18 days, carefully hand sorted to ensure perfection. The result is a cup that carries the full sweetness of the fruit without losing its clarity or complexity.
